Classic citrus apple crumble

Ingredients Apple filling
7 medium golden delicious apples, peeled, cored and cut into 1-2cm cubes 115g castor sugar, sifted
¹/₂ tsp ground cinnamon
¹/₄ tsp ground ginger
Juice of 1 lemon
Pinch salt
5ml vanilla essence
35g melted butter
Crumble topping
140g castor sugar, sifted 285g cake flour
Pinch salt
5ml ground cinnamon 90g rolled oats
5ml vanilla essence 225g butter, melted
Zest of 1 orange
Zest of 1 clementine
To serve
Icing sugar Cream or custard
Method
Preheat the oven to 180°C. Place the apple cubes, along with the remaining apple filling ingredients in a large bowl and mix to combine. Transfer to a ovenproof pie dish. For the crumble topping, place the 140g castor sugar, flour, salt and cinnamon in a bowl and whisk to combine, then stir in the oats.
Add the vanilla, melted butter and citrus zest and stir until just combined (there should still be some texture to the mixture, and it should have large “lumps”; you don’t want to mix until a fine crumb).
Spoon the crumble mixture over the apples (don’t press the crumble topping down) and place the dish on a large baking tray. Bake for 35-40 minutes, or until the crumble is golden and the apples are soft. Lightly dust with icing sugar and serve with whipped cream or vanilla ice cream. |
